Yunnan

Crossing-the-Bridge Noodles (过桥米线) are assembled by adding ingredients into very hot broth.

Yunnan Province (云南省) is also famous for wild mushrooms.

Eat them only from reputable restaurants where they are properly identified and cooked.

Guizhou

Guizhou Province (贵州省) is known for sour + spicy flavor combinations.

Try:

Sour Soup Fish (酸汤鱼).

Guangxi

Guangxi Zhuang Autonomous Region (广西壮族自治区) is known for:

Luosifen (螺蛳粉)

a rice-noodle dish with fermented bamboo shoots, peanuts, sour vegetables, chili and snail-based broth.
