Jiangnan food

Where is Jiangnan?

Jiangnan (江南) broadly refers to areas south of the lower Yangtze River (长江).

For travelers, think:

  • Shanghai (上海);
  • Suzhou (苏州);
  • Hangzhou (杭州).

Xiaolongbao

Xiaolongbao (小笼包) are thin-skinned steamed dumplings containing meat and hot broth.

Shengjianbao

Shengjianbao (生煎包) are pan-fried buns with crisp bottoms and juicy filling.

Hangzhou dishes

Look for:

  • West Lake Fish in Vinegar Gravy (西湖醋鱼);
  • Dongpo Pork (东坡肉).

Shanghai flavors

Some Shanghai dishes use soy sauce, sugar and wine to create rich, slightly sweet flavors.
